Good for the ‘rents

After the kitchen was finished I invited my parents to come over one Sunday to see the results and have lunch. After some discussion I decided to make Ina Garten’s
Basil-Chicken Hash. I had made it once before and loved the flavor. That time I used grocery store roasted chickens. This time I followed Ina’s recipe for the roasted bone-in chicken breasts. Very flavorful.

The recipe gives me a chance to use this huge 14″ Calphalon skillet I purchased some years ago. It takes up half of the stove and holds a whole lot of food. Now that Ted has moved into his own place and taken the family skillet with him I find I use the 14″ one much more frequently. I haven’t found a reasonable replacement yet, much to my chagrin.
 

Dinner for 2, no 3

I subscribe to a newsletter from cooksillustrated.com with recipes, etc. The April newsletter included menu for a dinner for 2: Crisp Breaded Pork Cutlets, Buttermilk Mashed Potatoes, and Roasted Maple-Mustard Green Beans. I decided to make this for Ted and I for Friday night dinner. Very tasty.
