Braised lamb shoulder (Joy of Cooking)
Potatoes Dauphinois (Joy of Cooking)
Chickpea Korma (using Trader Joe’s Korma Simmer Sauce)
Plus my husband made a lemon-kiwi triffle for dessert. Mighty tasty.
Notes
The lamb was incredibly tasty. I used a combination of bone-in roast and bone-in chops since I couldn’t find a large enough roast. While the bones took up a ton of space in the dutch oven they add so much flavor to the braise that it was worth the effort. My only complaint was that at the end the resulting sauce was too oily to use. If I had cooked this the night before and let it cool overnight I could have removed the oil off the top in solidified chunks. Maybe next time.
The potatoes were quite easy to make for a gratin and very tasty. The chickpeas were good, not great. I’ll probably look for a recipe and try to make them from scratch at some point.
