Back to the usual crew this week. I figured out the menu when the weather report was saying it would be coolish and rainy during the Saturday. Turned out to be hot and humid, not a great combo when running two ovens for much of the day. Still dinner was tasty.

Roasted yellow beets with vinaigrette
Sauteed cousa squash w/shallot and lemon zest

Bread pudding with apricots & sour cherry caramel
The cousa squash came from the farm stand. It is similar in shape and taste to zucchini. I sliced about 2.5 pounds on the mandoline to get consistent size pieces. I think I overcooked the shallots by having the pan too hot.
The beets took ~1 hour 40 minutes to cook rather than the 50 minutes we thought they would.
