The forecast was lousy and soup was on my mind late in the week and thus was born this menu.

The black bean recipe was for soup and I wanted something more stew like so that I didn’t need bowls. So I cut the broth (veggie in my case instead of chicken) down to 1 cup. Of course I doubled the recipe to cover the number of guests we had (13).
I also cooked the rice in veggie broth rather than water. So it was an off-white rice rather than a white rice. Still very tasty.
