No JenJoe this week nor was Michelle around.
I made a pseudo-chimichurri to marinade the pork with green herbs (basil, thyme, oregano, mint, summer savory and parsley), garlic, olive oil, salt & pepper. Marinaded for ~2-3 hours and then grilled to 145°F. Very tasty.
The usual potato & onion mix up for the grilled except I cooked it in a 13×9″ glass baking dish on the griddle portion of the grill. Covered with foil it cooked in about 45 minutes. Opened and stirred several times.
