Saturday night – 02/11/2012

When we gather for Saturday night close to someone’s birthday I try to ask them ahead of time what they would like for dinner.  Our friend’s daughter V’s birthday was coming up and she asked for just about everything we had on this list.

Baked kielbasa with homemade barbeque sauce
Potato & Onion Pierogies with caramelized onions and sour cream
Succotash
Roasted Beets
Homemade bread from my husband

Notes
There were 13 follks for dinner (9 adults; 4 kids) and it was a rousing success with almost everything devoured.

4 boxes of pierogies (approx. 48 pieces) were cooked and all but 3 were eaten.

For the succatosh I use 1 28 oz. can of Goya small red kidney beans in place of the dried bean. I also use a 16 oz. bag of Trader Joe’s frozen roasted corn and local grocery chain brand frozen lima beans. I typically double the rest of the ingredients (cream, thyme, salt, butter). I ended up with enough left over to use as part of lunch for a few days during the week.
