Saturday night – 01/05/2013

For the first Saturday night of the new year I thought I would try a new recipe or two.

Baked Ham with Maple-Orange Glaze
Black-eyed Peas (recipe toward the end of the article)
Jasmine rice
Braised mixed greens
Corn bread

There were 11 of us for dinner this week (8 adults; 3 children).

The ham is cooked in an oven bag and this method produces the best results for us. The ham is flavorful and doesn’t get dried out. I used leftover glaze and some of the accumulated ham drippings to make a sauce. Not to salty and very hammy tasting.

I doubled the black-eyed peas recipe and used dried peas. I thought it was quite tasty.
