Twas the eve before Easter and all through the land many friends were scurrying to finish their plans.
Sorry for the bad rhythm. We knew several of our friends would be joining us this week so we went with a slightly simpler menu. The weather was lovely; had it been 10 degrees warmer I would have made use of the grill.

Much smaller than usual group this week. There were just 5 of us for dinner this week (all adults).
The pork tenderloin temped as done when I checked it. After resting it for 5 minutes and cutting it there were some very pink (borderline red) pieces. So I popped them in the microwave for a minute to make sure they were cooked through. I’ll eat medium-rare pork myself however I won’t force it upon my friends.
Ted made the home fries and they were very tasty.
Given the smaller crowd we decided to go out for dessert at an ice cream stand a short drive away. The stand actually opened on March 15th. It was doing a pretty good business for a 45° evening.
