Back to normal this week with most of our friends joining us for dinner. Since there is more yard work than time in the Spring I wanted something I could mostly ignore until closer to dinner.
Slow-cooker Tomato Sauce
Green salad with radishes, roasted red peppers and lemon vinaigrette
Popovers with assorted jams, jellies and perserves
There were 12 of us for dinner this week (8 adults; 4 child).
I made 2#s of pasta and almost all of it was eaten. It’s difficult to imagine needing 3#s of pasta for dinner but we might have to try 2.5#s within a couple of years as more children enter their teens.
There were plenty of meatballs leftover so we’ll definitely be having open face meatball sandwiches with melted cheese sometime later this week.
The pop-overs were a hit. Ted made them in cupcake pans instead of the popover pan and they came out really nice. Cooking time was 28 minutes total; 15 minutes @ 450°F then 13 minutes @ 350°F.
