There were 9 of us for lunch (6 adults; 3 kids).
I used boneless chicken thighs for the grilled chicken rather than a whole chicken. I skipped the slashing, kept the brine, skipped the smearing with paste and kept the post flip baste. The chicken was quite tasty. I think it is different enough from the original recipe that I’ll write it up at some point.
The tabouleh was good with a nice lemon taste. It needed a bit of punch though so maybe a bit of chile pepper next time.
The corn was great if I do say so myself. I’m very happy with the way it came out. Recipe to follow sometime this week.
