It was time to come up with a menu for this week and I was lacking in inspiration. So I looked back at what we made last year around this time and basically copied that menu, swapping out the protein for what was on sale at Ye Olde Wholesale Club Store.

There were 13 of us for dinner this week (9 adults; 4 child).
The pork was brined for about an hour before hitting the grill. These were fairly thin pieces of pork so they cook in about 5-7 minutes. I was happy with the flavor and amount of moisture left in the chops.
The curried chickpeas were good. I think they could have cooked a bit longer to yield a slightly less toothsome chickpea. Still they were good. We probably have a quart leftover so I suspect there will be samosas in my future. Not that that is a bad thing.
The rice recipe is from Joy of Cooking. I used a vegetable broth in place of the chicken stock. It was well received.
