Slow-cooker Cuban Style Pork with Mojo Sauce

Our main course is once again from Slow Cooker Revolution Volume 2: The Easy-Prep Edition from America’s Test Kitchen. The pork was delicious. The sauce calls for white vinegar; Ted suggested perhaps replacing that with lime juice might have upped the sauce flavor.
The potato rosti was partly based on an Alton Brown podcast and partly a recipe from Joy of Cooking. Neither quite fit the bill though so I added a bit of this and that to make it my own. Recipe to follow in a day or two.
