Saturday night – 09/27/2014

The warm weather has returned for a few days so I did most of the cooking on the grill this week. It took a bit of trial and error to use the grill as a cooktop however it can be done.

Grilled Boneless Chicken Breasts
Black Beans and Rice
Fried Green Tomatoes
Homemade Rolls

Apple Crisp with French Vanilla Ice Cream

10 gathered for dinner this week (7 adults; 3 kid).

I struggled with a second side dish this week. My first thought was beets however they are a bit of a pain. My next thought was roasted green beans except the main side is full of beans. A salad is, well, a bit boring. I wandered around the farm stand, saw a bin of green tomatoes and decided to give fried green tomatoes as try. The result was good in my improvised recipe.

Note to self – 7 chicken breasts (one “family” pack) was enough for the 10 of us with a bit leftover. You don’t need to buy 1 breast per person.
