Our favorite vegetarian had other plans this week so it was a meat-integrated-meal Saturday. With meat, veg and starch in the same dish it seems like scant menu however everyone enjoyed it to their fill.
7 gathered for dinner this week (6 adults; 1 sleepy kid).
The shepherd’s pie was pretty close to the one in the referenced recipe. I had some mushrooms in the fridge so I sliced those up, microwaved them for 5 minutes to kick start the cooking, drained them and then cooked them in a bit of olive oil prior to cooking the turkey. I added them to the turkey layer of the casserole.
Brushing the biscuits with a bit of melted butter made an enormous difference in browning. I always thought it was a waste of time however, at least for these biscuits, I’ve changed my mind.
