Cook’s Illustrated has a habit of over-complicating their recipes. The results, while excellent, often come with extra effort that in the mind of this devotee are not always worth it. After making their “simplified” lasagna bolognese I can only wonder at what the non-simplified version is like. This lasagna is a combo of a flavorful meat sauce and a simple white sauce with noodles and Parmesan cheese. The result was very nice even if it didn’t stay together in picture perfect form.
