Saturday night – 05/30/2015

We celebrated Ted’s birthday this week with an extended group for our regular Saturday night gathering.

Chicken and Sausage Bake
Pasta with Pesto and Roasted Cauliflower
Roasted Asparagus with Parmesan
Ted’s Focaccia

Tangerine Spice Cupcakes
Ice Cream Sandwiches

17 gathered for dinner this week (9 adults; 8 kids).

I made a double recipe of the chicken and sausage bake in the roasting pan we use for the Thanksgiving turkey. I use all chicken thighs for convenience and predictable baking time all round. Sausages seemed more popular than the chicken thighs though.

Roasting the cauliflower adds some lovely flavor to what is essentially a pasta salad.

The cupcakes were delicious and well received. Recipe coming later this week.
