This week’s menu inspiration arrived while visiting the local warehouse-style “club” for coffee k-cups. I tend the take a walk of the perimeter of the store before grabbing the coffee to get in a few extra steps toward the mythical 10k-a-day step goal. In the meat section I found a 10 pound pork shoulder that looked like it would fit in our slow-cooker. And so another Saturday night menu was born.
Slow-cooker Pulled Pork with Barbecue Sauce
Baked Potato Wedges
Steamed Green Beans
Jalapeno Corn Bread
5 gathered for dinner this week (4 adults; 1 kid).
7.5 hours in the slow-cooker wasn’t quite enough so I dumped most of the shoulder into the pressure cooker with a cup or so of braising liquid and gave it 15 minute pressure bath. Next time try 10 hours in the slow-cooker.
The sauce was ketchup, chili sauce, braising liquid and some of the dry rub I used on the pork simmered until it thickened.
The chewy brownie recipe is from Cook’s Illustrated back in 2010. I replaced the 6 oz. of chopped bittersweet chocolate with a similar amount of chocolate chips. 30 minutes seemed to hit the right mark for doneness.
