Sous vide thighs @ 165F for 1.25 hours. Then pan sear 4 at a time. See Sous Video notebook for more info.
The brownie recipe is from Joy of Cooking. Baked for 27 minutes (13, then rotate, 14 more). Used 1 cup walnuts and 1 cup semi-sweet chocolate chunks. Moist in the middle, even after cooking. This might be “the one”.
