How do you plan a summer menu when you don’t know whether you’ll have access to the grill? First, you always have access to the grill if you are willing to ignore the water falling from the sky. Second, you can always use an indoor cooking method if water is your nemesis.

Grilled Pork Kebabs with Romesco
Sauteed Corn with Leeks (and Bacon!)
Zucchini Pancakes

4 gathered for dinner this week (4 adults; 0 kids).

Had the skies opened up my plan was to cook the kebabs on the long griddle we use for pancakes. Ted suggested I could broil them as well. The forecasted rain was a no show so the grill got the kebabs, which were based on this recipe though I made my own Romesco.

The addition of bacon to the sauteed corn and leeks was good. I made about a half recipe and used a bit of bacon fat to saute the leeks in addition to the butter.
